This is one of the most creative recipes that I have tried to make! I saw @cristina_yin on tik tok do this so I knew that I had to recreate it, with my own twist! This recipe makes 5 mini lemon cakes, or 4 very large ones
Ingredients:
2 lemons, (3 lemons if you plan on make 5-6 mini lemon cakes)
2 eggs
1/4 cup flour
1/4 cup milk
2 tbsp sugar
Instructions:
Preheat your oven to 180C (350F)
Cut the lemons in half, vertically and remove all of the lemon pulp and juice. Set aside.
In a bowl, separate the egg yolk from the whites. Using a hand mixer, beat the whites until they form stiff peaks. Allow it to rest in the fridge
In a separate bowl, combine the flour, milk, egg yolks and sugar. Once combined, add 1 tsp of the lemon juice (from the cored out lemon) and mix thoroughly
Gently combine the two mixtures together and transfer the mixture into a piping bag.
Place the lemons on the baking tray and piping the filling into the lemon, until it is 3/4 full.
Bake for 15-20 minutes or until the top is golden brown
Dust with powdered sugar, and add a spoonful of lemon curd on top (if you want!) Enjoy!
i think we can all agree the idea for the recipe is really cute... but the execution just isnt good. Baking in a lemon is cool, but it bakes very unevenly. When the top was golden brown (as instructed) the batter at the bottom was nearly raw. Also you make probably three times as much batter as needed. Cute, but not practical at all.
i just made these and they are AMAZING. so easy to make and so delicious.. i added a little more lemon juice to mine because it didn’t taste much like lemon.. and there was extra batter so i made mini muffins! definitely recommend these🖤🖤
I just tried this recipe! Makes way more batter than you need, so I made mini muffins out of the excess. The lemon rind gives the cake this awful bitter taste, but if you’re just doing it for the pictures, it works! The mini muffins without the lemon rind taste were a hit with my parents tho
