Next up on the lava cake series is matcha lava cake! This is probably going to be my favourite flavour in the series because matcha has always held a special place in my heart. These lava cake recipes are adapted from Unicorns in the Kitchen, so go check them out!
Ingredients:
- 56g white chocolate
- 56g butter, melted
- 50g powdered chocolate (1/2 cup)
- 1 egg yolk
- 1 egg
- 1 1/2 tbsp flour
- 1 tbsp matcha
Instructions:
Preheat the oven to 200 C (400 F) and grease two ramekins
In a microwave-safe bowl, combine the white chocolate and butter. Microwave it for 45 seconds or until it has melted.
Slowly add in the powdered sugar until incorporated.
Once combined, add in the egg and egg yolk. Stir until there are no lumps visible
Add in the flour, mix thoroughly. Once combined, add in the matcha powder.
Evenly distribute the batter between the two ramekins.
Bake for 12-13 minutes or until the edges are firm and the centre is still gooey.
Let it cool for 2-3 minutes before flipping the ramekins over and onto a plate
Serve with berries (personal preference: strawberries), and powdered sugar... enjoy!
