Lemon Olive Oil Cake

Ever since the "famous" olive oil cake that the Kardashians bought in LA came out last year, I've always been meaning to try recreate the recipe. What better way to incorporate my favourite flavour: lemon! This makes one small-medium sized cake or two small sized cakes.


Ingredients:

- 1 egg + 1 egg yolk

- 90g white sugar

- 60ml olive oil

- 100g milk

- 40-50g lemon juice

- 105g flour

- 1/2 tsp baking powder

- 1/4 tsp baking soda

- Rosemary (optional)

- Lemon slice (optional)


Instructions:

  1. Preheat the oven to 180 C (350F). In a small bowl, whisk the eggs, white sugar and olive oil until well combined

  2. Once mixed, add in lemon juice and milk. Be sure to whisk this quickly before the milk curdles!

  3. In another bowl, combine the flour, baking powder and soda. Fold the wet into the dry mixture gently.

  4. In two or one greased cake tin, pour the batter until it is 3/4 filled. Bake for 20-30 minutes, when the top is slightly golden brown. Take it out of the oven and allow the cake to cool

  5. Dust the top of the cake with powdered sugar. Place a small spring of rosemary and a small lemon slice on top. Serve and enjoy!
