Lemon Lava Cake

After making chocolate lava cakes, I knew I had to re-create them with different flavors! Lemon, especially lemon curd, is one of my favorite ingredients to bake with, so of course, I needed to make a lemon lava cake. This recipe is adapted from Unicorns in the Kitchen Lava Cake so be sure to check them out! This recipe makes 2 servings.


Ingredients:

- 2 ounces of white chocolate

- 1/4 cup butter (57g)

- 1 egg

- 1 egg yolk

- 1/2 cup powdered sugar (50g)

- 3 tbsp flour (27g)

- Juice of one lemon

- 2 tbsp lemon curd (40g)


Instructions:

  1. Preheat the oven to 200 C (400 F) and grease two ramekins

  2. In a microwave-safe bowl, combine the white chocolate and butter. Microwave it for 45 seconds or until it has melted.

  3. Slowly add in the powdered sugar until incorporated.

  4. Once combined, add in the egg and egg yolk. Stir until there are no lumps visible

  5. Add in the lemon juice and flour, stir.

  6. Evenly distribute the batter between the two ramekins. Add in 1 tbsp of lemon curd into each ramekin, pressing down slightly so the batter covers the curd.

  7. Bake for 12-13 minutes or until the edges are firm and the center is still gooey.

  8. Let it cool for 2-3 minutes before flipping the ramekins over and onto a plate

  9. Serve with berries, powdered sugar (and more lemon curd); enjoy!
