Bite-sized banana bread muffins for a quick snack or a yummy breakfast. Not only is this a simple recipe but you can make it one bowl; I hope you try out this recipe!
Ingredients:
- 3 bananas (large)
- 1 1/4 cup flour
- 1/3 cup melted butter (76g)
- 1/3 cup white sugar, (75g)
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 cup chocolate chips (optional)
Instructions:
Preheat the oven to 220 C (approx 425 F), grease a 24 mini muffin tray
In a large bowl, mash the bananas. Once mashed, add the melted butter. Mix until combined
Once combined, incorporate the vanilla extract and egg. Mix until it all ingredients are incorporated.
Add in the white sugar and mix well.
Finally, add the flour and baking soda. Make sure not to over mix as that creates a tougher batter
(Optional) Add in the chocolate chips into the batter. Leave a handful of chocolate chips for the top of each muffin
Evenly divide the batter into the mini muffin tray.
Bake for 30 minutes, or until the tops of muffin are golden brown.
Once cooled, serve and enjoy!
